Winter Vegetable Ideas
- Add any vegetables to stews/ curries/ soups to bulk it up and add more fibre eg. Broccoli, cauliflower, baby marrow, patty pans, celery, tomaties, mushrooms, carrots, baby corn, snap peas
- Stir-fries: cabbage (purple and green), carrots, broccoli, baby marrow, mushrooms
- Beetroot (home cooked or baby beets that have already been cooked - no sugar added
- Roasted vegetables: even if it has sweet potato and butternut in, you can then just leave your starch out or reduce the serving size of starch served with the meal.
- Mielies can also be broken in smaller pieces and incorporated into meals. 1 Mielie = 1 starch. So even if you leave out the starch, you can have 1 full mielie (corn on the cob) and then still add more vegetables to the meal
- Spinach cooked with onions, no cream. You can add a bit of milk for the creaminess if preferred but limit amount of oil used.
- Steamed vegetables : broccoli/ cauliflower, carrots, brussel sprouts etc (all of these can also be roasted to addanother taste and texture dimension to it. You can add a little bit of oil over it when roasting and also used some nice vegetable spices such as Ina Paarman veggie spice
